Conjuring with Vanya in the kitchen, I simultaneously spend time with the child and teach him responsibility. It's an incomparable experience and a real pleasure for both of us.

Among all the dishes that I have ever cooked or tried, my favorite remains potatoes with mushrooms in the oven. I associate this dish with a wonderful Soviet childhood, with a dacha, with something carefree and bright. The smell of fresh mushrooms and garlic sizzling in the pan takes me back to those magical days when my mother and her sister were in a hurry to please us with our favorite summer food.

Initially, I cooked potatoes in the oven for standard recipe, however, over time, I discovered a few little tricks and spices with which you can add new flavors to the dish. I just want to talk about one of these options.

We will need:

  • Potato;
  • Mushrooms - porcini, chanterelles or mushrooms are perfect for frying, in winter you can take fresh champignons;
  • Natural sunflower oil"Oleina";
  • Sour cream - the fatter, the better;
  • Cream;
  • Cheese - to your taste, I like parmesan and other hard varieties more, and someone prefers gouda or cheddar, everything is individual here;
  • Half a red chili pepper;
  • One or two cloves of garlic;
  • Salt;
  • Optional: a pinch of ground nutmeg and a few fresh parsley leaves.

The amount of ingredients depends on how many people you want to feed. There are no clear proportions, everything is done by eye.

  1. We cut the potatoes into round slices, not very thin so that they do not dry out when frying, but also not too thick, poorly baked from the inside. Fill with water so that the potatoes do not darken. We cut the mushrooms into fairly large pieces.
  2. Now it's time for the garlic. In no case do we press it under pressure, but cut it into thin, almost transparent rings. Finely chop the chili pepper.
  3. Now you can put the knife down and heat up the pan. We put it on a strong fire, add sunflower oil and fry garlic and pepper in it. When the garlic rings get golden color, add mushrooms and fry them until golden brown. Then we send sour cream to the pan, mix everything thoroughly. Simmer for 5-10 minutes.
  4. Grease a baking sheet or glass dish vegetable oil and carefully put potato slices and mushroom mass into it. It can be in layers (potato-mushrooms-potato-mushrooms), you can have potatoes on the bottom, mushrooms on top - as you like. Don't forget to salt each layer. I also add ground nutmeg if I feel like it.
  5. To make the potatoes bake well and turn out tender and soft, pour everything with a glass of cream. Sprinkle the dish with grated cheese on top - it will give a delicious crisp when it comes out of the oven.
  6. I bake for a long time: at least 50-60 minutes at 180 degrees. However, these are approximate recommendations: potatoes and mushrooms are different, so the process must be monitored.
  7. Ready potatoes with mushrooms, I also sometimes sprinkle with finely chopped parsley. Not very abundant: she should not take responsibility for taste qualities dishes, it is rather a light finishing touch. The combination of a golden cheese cap and emerald green leaves, a delicate aroma of fried potatoes, garlic and pepper - it will be delicious, I promise!

Sprinkle before serving green onions.

OLD RUSSIAN FISH IN A POT
100 g pike perch, 100 g potatoes, 40 g onions, 20 g cheese, 100 g sour cream, 30 g broth, 20 g butter. Marinade: 30 g water, 0.2 g citric acid, salt pepper.

After boiling the porridge at a low boil for 5-6 minutes, drain the water and transfer the porridge into portioned pots. add butter, milk or cream, mix everything, cover with a lid, put in a medium preheated oven. Serve in pots.

CABBAGE WITH SOUR CREAM IN A POT
1 kg cabbage, 50 g onion, 100 g butter, 200 g sour cream, salt.
Chop cabbage, dip for 10-15 minutes in salted boiling water. Cool, drain water. Lightly fry finely chopped onion with 2 tbsp. oil, mix with cabbage, pour a small amount of broth or water, salt to taste. Then put in pots and bake in the oven, then pour sour cream and serve.

POTATOES WITH MUSHROOMS IN A POT
750 g potatoes, 500 g fresh mushrooms, 1-2 onions, 100 g sour cream, parsley, salt, 3 tbsp. l. oils.
Peeled and washed fresh mushrooms scalded with boiling water, cut and fry in a pan with onions. Peeled potatoes cut into slices, fry and put together with mushrooms in a pot, pour water to the level of the top layer. Add salt Bay leaf, pepper, sour cream and, having covered the pot with a lid, put in the oven for 30-40 minutes.

POTATOES WITH VEGETABLES IN A POT.
700 g potatoes, 100 g carrots, 1 onion, 40 g parsley root, 80 g boiled corn kernels, 60 g ghee, 200 g tomato sauce, salt, spices, herbs.
Roots, onions and potatoes cut into cubes. Fry the roots and onions in oil, mix with raw potatoes, pour tomato sauce, add some broth. Then put boiled corn, lava, peppercorns, salt. Close the pot with a lid and keep in the oven until cooked.

GOOSE OR DUCK IN A POT
700 g goose or duck meat, 250 g cereals, 1 onion, 1 carrot

  1. Before cooking potatoes with mushrooms in the oven, the potatoes need to be washed, peeled, cut into strips and fried in hot vegetable oil (2 tablespoons) until golden brown.
  2. Dilute the tomato paste with a small amount of water, pour it over the potatoes, salt and simmer over low heat.

Cooking method:

Before making potatoes in the oven, the mushrooms must be washed, chopped, put in a dry frying pan and simmered until all the liquid has evaporated. Add a little vegetable oil, put chopped onion, fry, salt, cool. Cut off peeled potatoes upper part, carefully cut out the middle with a small sharp knife, salt and fill with minced mushrooms. Place stuffed potatoes in a greased baking dish. Bake in the oven until done (1 hour). Put the baked potatoes on a plate and sprinkle with chopped dill. Serve hot.
