Yesterday I told you about how to prepare 1.5-2 kg of meatballs from 1 kg of meat. I have three recipes for making such a pile of meatballs. Yesterday I told you how you can cook them in a slow cooker in tomato sauce, and today a bonus for those who don’t yet have a multicooker - cooking in a frying pan. I also took not tomato sauce, but sour cream for variety. Try, cook, help yourself!

The preparation is very simple if the meatballs are already waiting in the freezer for their time. If you haven’t made them yet, then you need a recipe for making meatballs with peas, which I talked about in the last topic. Remember? In the last topic they looked like this:


I froze them on a board, which I immediately put in a plastic bag. I even got a board in tights =) This is so that it doesn’t get cold in the freezer =)

As soon as the meatballs turned into meat “stone” balls, I simply took the bag by the ears, turned it inside out and all the frozen meatballs immediately ended up in the bag. Today I took them out of the freezer in this form:

Eight meatballs immediately moved into a small bag and went to wait tomorrow, and the rest will literally turn into dinner for the whole family in 30 minutes.

To cook meatballs with gravy in a frying pan, you need the following products:

    1 large onion

    salt and spices to taste

    bunch of dill, fresh or frozen

    1-2 bay leaves

    vegetable oil for frying

Cooking time: if the meatballs are waiting in the freezer, then 30 minutes is enough
Complexity: easy (the main thing is not to overcook)

Preparation:

Peel the onion and cut into small cubes. We send it to fry in vegetable oil.

As soon as the onion becomes transparent and begins to turn yellowish, add spices and salt. Add broth (or water) to the roast and bring to a boil.

And also add half a glass of sour cream and bay leaves.

Mix.

Throw the meatballs into the boiling sauce, bring to a boil and reduce the heat. Cook the meatballs under the lid over low heat for about 15-20 minutes (depending on the size of the latter).

So, let's start with recipes with rice, which prevents our delicious minced meatballs from falling apart. By the way, that’s why they are sometimes called “hedgehogs.” If the cereal is raw, then our animal will be prickly. Below are options with a prickly hedgehog and a soft hedgehog.

Meatballs in white sauce

We will need:

    bulb;

    4 tbsp. l. sunflower oil;

How to cook:

    After the rice is cooked until half cooked, strain it and mix it with the minced meat.

    Add half the roughly chopped parsley, salt and pepper to taste.

    Knead the minced meat well, moisten your hands and form balls the size of Walnut; bread them in flour.

    Coarsely chop and cook two carrots, celery and an onion, cut into 4 parts, in a liter of salted water. When it all boils, add the meatballs and cook until the rice is cooked.

    Fry the flour in a dry frying pan, stirring constantly so as not to burn.

    Mix sour milk with fried flour and egg, beat it all with a fork or whisk.

    Pour this mixture into a saucepan with a thick bottom, strain into it as much cooled broth from the meatballs as is necessary to obtain a liquid gravy. Place on low heat and cook, stirring constantly. As soon as the gravy boils, remove the pan from the heat and add a little more broth. Add lemon juice there.

    Place the balls into the prepared sauce and simmer over low heat until cooked.

    Sprinkle coarsely chopped parsley on top.

    Fry the tomato paste, dilute it with water or broth, add a bay leaf, add some salt, lay out the “hedgehogs” and simmer over low heat until the rice is ready.

Serve the “hedgehogs” with gravy warm.

Ground beef meatballs with gravy

Beef is a drier and tougher meat compared to pork. But it's perfect for meatballs. It turns out not so fatty, but no less tasty and appetizing. Try this recipe, you will definitely like it.


Ingredients:

  • beef – 350 g;
  • cream – 100 ml;
  • a piece of stale loaf;
  • clove of garlic;
  • 2 spoons of tomato paste;
  • spoon of flour;
  • salt, sugar and spices to taste.

Rinse the meat, dry it, grind it together with the loaf. Add cream to the resulting mixture. Mix the minced meat with cream and finely chopped garlic. Make meatballs, roll them in flour, fry on both sides, and place in a pan. In the remaining fat, fry the tomato paste with flour, add a little water, salt and spices. Pour the resulting sauce over the meatballs and simmer them under the lid for 25-30 minutes.

Fish meatballs with gravy


Meatballs made from minced fish are no less tasty than meatballs, and they have much more benefits. You can buy ready-made minced meat, but keep in mind that bones and cartilage are ground together with the fillet. So it’s better to buy fish or a piece of it and prepare the minced meat yourself.

Ingredients:

  • 1 kg fish fillet;
  • 200-300 g of rolls or loaves;
  • 3-5 onions;
  • medium carrot;
  • a couple of spoons of tomato paste;
  • salt and favorite spices;
  • vegetable oil for frying.

Wash the fish, dry it, remove bones, if any. Soak the bun in water, peel half the onion, cut into cubes and fry. Grind all products in a meat grinder, add salt and spices. Make meatballs and fry them on both sides. Place in a saucepan.

For the gravy, peel the remaining onions and carrots. Chop the onion, grate the carrots, simmer in a frying pan with a small amount of vegetable oil. Add tomato paste, flour, mix everything, add water, boil for 10 minutes.

Pour the gravy over the meatballs and simmer for about 30 minutes. Before serving, sprinkle with grated herbs.

Meatballs with prunes and gravy

An amazingly tasty dish, in which there is only one secret - prunes. It’s simple and quick to prepare, and the aroma is such that everyone will run to the kitchen long before the meatballs are ready.


Ingredients:

  • minced pork and beef – 500-600 g;
  • a glass of rice;
  • two medium onions;
  • egg;
  • 2 tsp salt;
  • 1 tsp Sahara;
  • a pinch of ground black pepper;
  • 2 bay leaves;
  • 2 table. l. volume.paste;
  • 1 tsp vinegar;
  • prunes – 100-150 g;
  • 2 tbsp. flour;
  • 300 ml meat or vegetable broth;
  • a little growing oils for frying.

Wash the rice and boil until half cooked. Chop one onion and add to the minced meat. Beat in the egg, salt and spices. Mix everything thoroughly. Make small meatballs, roll each one in flour.

Pour boiling water over the prunes, leave for 5-7 minutes, then rinse, cool and finely chop.

Chop the second onion, fry until golden brown, add tomato paste, broth, vinegar and sugar, season with spices.

Pour the sauce over the meatballs, add prunes and bay leaves, and simmer under the lid for about half an hour. Can be served with any side dish.

Squid meatballs with gravy

An elegant recipe that, for all its sophistication and originality, requires a minimum of preparatory work and additional products.


Ingredients:

  • squid carcasses – 500 g (if frozen, then 650 g);
  • 2 large onions;
  • 3 table. l. flour;
  • half a glass of rice;
  • egg;
  • 300 ml tomato juice;
  • salt and black hammer. pepper to taste;
  • frying oil;
  • fresh greens.

Wash the squid, dry it, peel it, grind it together with the onion. Boil the rice until half cooked. Mix the minced meat with rice, egg and mix thoroughly. Form balls with wet hands, roll in flour, and fry in a frying pan. Fill tomato juice, simmer for 20 minutes, add finely chopped fresh herbs, cover with a lid and let stand for a few minutes.
