  • ½ tsp any sugar (brown or white);
  • 1 tbsp peeled pine nuts;
  • salt + freshly ground black pepper.

First we prepare the marinade. Set aside half of the mint leaves to garnish the finished dish. But the second half of the leaves chop with a knife and mix them with raisins.

Peel 1 garlic and finely chop the clove with a knife. Add it to the mint-raisin mixture. Pepper this mass lightly. Then add a spoonful of wine vinegar and sugar. Mix all the ingredients thoroughly and leave the mixture for half an hour to infuse.

Cut the vegetables into slices 5-6 mm thick. I don't recommend cutting it. In a skillet, sauté the remaining crushed garlic clove in hot oil. Then remove it. And in flavored oil, start frying the zucchini slices.

Put the finished circles on a paper towel. We don’t need extra fat, we have enough of our own 😉 After a little salt the vegetables. Then transfer the zucchini to a plate, pour over the marinade and mix. Do this very carefully, because the fried zucchini is tender and can fall apart.

After all this procedure, leave the zucchini for an hour. And then put them on a plate, sprinkle with pine nuts and garnish with the remaining leaves of fresh mint. How to fry zucchini with tomatoes and garlic

Need to prepare:

  • 0.5 kilos of zucchini;
  • 2 large tomatoes;
  • 2 cloves of garlic;
  • 1-2 eggs;
  • 1 tbsp mustard;
  • vegetable oil;
  • 10 gr green onions;
  • salt + freshly ground black pepper + sugar to taste.

My zucchini, you can peel and cut into circles. Then add a little salt and pepper, and then leave for 5-7 minutes.

This time you need to boil the hard-boiled egg, then remove the bowl with the egg from the heat and take up the zucchini again. We put a frying pan on the fire, pour oil into it, and then put the circles here. And fry vegetable rounds. Put the finished product on a plate, let it cool.

Now let's make the sauce with spices and tomatoes. We clean the tomatoes from the skin, scalding them with boiling water and finely chop them. Then add mustard here, 1 tbsp. vegetable oils, salt and sugar with pepper. Mix all ingredients well.

Pour the fried zucchini on top with sauce and sprinkle with chopped green onions. And next to this vegetable dish lay out a chopped egg. Summer dinner is ready. Bon appetit!
