Then it will become even more crumbly and during frying it will not form a porridge with vegetables. There are also many variations on this theme in Thai cuisine. Let's take the simplest of them with a minimum of components.

Ingredients:

  • “Jasmine” rice – 200g;
  • onion – 1 piece;
  • egg – 2 pcs;
  • red hot pepper – 1 piece;
  • cucumber – 1 piece;
  • cashew nut - a handful;
  • salt - to taste;
  • oil for frying.

Cooking:

  1. First, let's prepare the products. Grate the cucumber on a coarse grater along with the skin, squeeze a little and drain the juice. Cut the hot pepper in half and remove the seeds, which contain more heat. Cut the onion into quarter rings.
  2. Heat the oil in a frying pan and first add the nuts, fry them a little, then remove them from the frying pan and set them aside for now.
  3. Place the onion in the same pan and cook for 1 minute. Break the eggs and mix until lumps form.
  4. Add cucumber and pepper. Fry for another 1 minute.
  5. It's the turn of the rice, add salt, mix and cook for another 3-4 minutes.
  6. When serving, sprinkle with roasted cashews.

Soy sauce, by the way, is rarely added to any Asian version when cooking.

Rice with turmeric and vegetables Indian style


Very often there is a dish with an easily recognizable yellow color, which is colored by turmeric. This is exactly what our Indian dish will be.

Ingredients:

  • basmati rice - 3/4 cup;
  • onion – 1 piece;
  • canned red beans – 3 tbsp;
  • hot pepper – 1 pod;
  • potatoes – 2 pcs;
  • garlic – 3 cloves;
  • cardamom – 3 pcs;
  • cinnamon – 1 stick;
  • turmeric – 1 tsp;
  • salt - to taste;
  • coconut shavings - for serving.

How to cook:

  1. Peel and finely chop the onion, remove the skin from the garlic and rub it together with salt with the blade of a knife, cut the pepper into pieces without removing the seeds.
  2. Peel the potatoes and cut into slices.
  3. We need canned beans without adding tomato paste. Take three tablespoons and rinse them in a strainer with cold water to remove the starchy liquid that contained them.
  4. Crush the cardamom with a knife and take the seeds.
  5. Pour about half a glass of oil into the frying pan. Heat well and add onion, garlic, cinnamon, cardamom, pepper and turmeric. Heat the spices in the oil for a few seconds.
  6. Pour in the cereal and add the potatoes, salt, add enough hot water to cover the entire contents of the pan by 1 centimeter. Cover and cook until the rice and potatoes are soft.
  7. Add beans, heat for another 1 minute and turn off.
  8. When serving, sprinkle with coconut flakes.

Preparation

  1. Boil the rice until tender for 10-15 minutes, depending on the variety.
  2. Finely chop the garlic and onion.
  3. Place a thick-bottomed pan on the burner, heat it, and break the eggs into it. Stir with a whisk until the mixture “sets” a little.
  4. In a deep frying pan: heat the oil in a wok or deep fryer. Place chopped garlic, onion, and peas in it and simmer for a few minutes.
  5. Add rice, fried eggs and soy sauce to this mixture. Season with pepper and stir. Keep it on the fire for no more than a minute, stirring constantly.
  6. The dish is served hot, as soon as we remove the pan from the heat. You can offer it with cheese, boiled pork, mushrooms and shrimp.

Recipe No. 2: Rice with Egg and Nuts

Ingredients:

  • 1.5 cups rice
  • small piece of butter
  • 3 eggs
  • half a cup of cashew nuts
  • small bunch of dill
  • 3 stalks of green onions
  • 1 tablespoon soy sauce
  • salt, ground red pepper - to taste.

Preparation

  1. Boil the rice until tender, drain the water, and rinse the grains under running water.
  2. Finely chop the dill and green onions. Chop the nuts with a sharp knife.
  3. Beat the eggs with a whisk or mixer at high speed. Salt and pepper. Add chopped dill to the egg mixture and stir.
  4. Melt some butter in a frying pan. Pour the eggs and herbs into it, cover with a lid and reduce the heat. When the thin omelette is fried on one side, turn it over and cook for another minute. Then remove from the pan, roll into a tube, place on a cutting board and cut into thin rings. The result is omelette “spirals”.
  5. Gently mix them with boiled rice, green onions and nuts. The Chinese dish is ready!
  1. It is best to use long grain rice, cooked 1-2 days before frying. If you are going to cook in the evening, you can spread it in a thin layer on parchment in the morning. Thanks to this, the grains will not stick together and there will be no lumps in the finished dish.
  2. Do not overmix the beaten eggs and rice. You should end up with small pieces of omelette.
  3. When cooking rice, choose light soy sauce.
  4. Add no more than 2 teaspoons of soy sauce. It should not completely color the rice, but only give it a brownish tint.
  5. Slice green onions at an angle. This will make a fairly simple dish much more beautiful.
  6. Add the onion at the very end of cooking to preserve its flavor.
