Zucchini sandwiches with tomatoes and cheese

Ingredients:

  • Baguette loaf - 1 piece (you can also use bread, both white and black);
  • Zucchini - 2 pieces;
  • Tomatoes - 6 pieces;
  • Flour;
  • Mayonnaise;
  • Garlic – 1-2 cloves;
  • Salt;
  • Ground black pepper;
  • Greenery;
  • Vegetable oil.

Peel the zucchini and cut into slices. We also cut the baguette (bread). Tomatoes can be cut into either circles or slices. We either cut the cheese into thin slices, or grate it on a coarse grater - as you like.

Pre-fry the zucchini in a frying pan, rolling them in flour. Before this, they must be peppered and salted.

Place the sliced ​​bread on a flat plate. Place fried zucchini on top. Lubricate the zucchini with mayonnaise, you can add a little crushed garlic.

Place the next layer – tomatoes. You can finish here, or you can add another layer of zucchini, which we also coat with mayonnaise.

Decorate with herbs - the sandwich is ready!

Zucchini with tomatoes and melted cheese in the oven

Zucchini sandwiches with tomatoes and cheese are a simple, but quite tasty and satisfying snack at any time and for any table.


It is best to cook these sandwiches in the oven or microwave.

Let's take the following products:

  • Zucchini - 1 pc.
  • Tomatoes - 2 pcs.
  • Cheese - 100 g
  • Garlic - 2-3 cloves
  • Dill
  • Mayonnaise
  • Ground black pepper
  • Vegetable oil

Take the zucchini, wash them, peel them and cut them into round slices.


We also cut the tomatoes and slice the cheese. Fry the chopped zucchini in a frying pan.

Place the fried zucchini on a plate if you are cooking it in the microwave, and on a baking sheet if you are cooking it in the oven.

However, here we will not use whole zucchini, but grated it together with carrots and sausage cheese.

Required ingredients:

  • carrots - 0.5 pcs.;
  • zucchini - 1 pc.;
  • sausage cheese - 150 g;
  • kiwi – 2-3 pcs;
  • garlic - 2-3 cloves;
  • sour cream - 2 tbsp. l.;
  • mustard - 1 tsp;
  • loaf (bread)
  • salt, pepper - to taste.

Peel the zucchini and carrots and grate them. We also grate the cheese and mix everything in a plate.


Mix sour cream with mustard, squeeze out the garlic and add to the grated vegetables. Mix everything well.


Place the sliced ​​bread on a baking sheet, grease it with the prepared mixture and bake in the oven.


After acquiring a golden color, we take out the finished sandwiches, put a piece of kiwi on top of them and serve.

Sandwiches with fried zucchini. Instant snack


In this recipe we will roast zucchini, which you can then put on bread to make a sandwich.

For preparation we will take the following products:

  • Zucchini – 1 pc.;
  • Flour;
  • Vegetable oil;
  • Pepper;
  • Salt;
  • Mayonnaise;
  • Garlic.

Wash the zucchini, peel and cut into rings up to 2 mm thick. Season each circle with salt, pepper and roll in flour. After this, fry in a frying pan on both sides until golden brown.

Chop the garlic and mix it with mayonnaise. After this, we smear each zucchini. You can put another slice of zucchini on top. Decorate with herbs and, if desired, place it all on bread.

This is a recipe for an unusual snack that uses marinated zucchini in honey.


To prepare such a snack we will need the following products:

  • Zucchini – 1 kg
  • Honey - 2 tbsp. l.
  • Garlic - 3 cloves
  • Salt - 1 tsp.
  • wine vinegar - 3 tbsp. l.
  • Greenery
  • Basil

Wash the zucchini, peel it and, using a vegetable cutter, cut it into noodle-like slices.


Leave for 30 minutes to get some juice. Mix honey with wine vinegar. Finely chop the basil and herbs and add to the honey.

We drain the resulting juice from the zucchini, and squeeze the zucchini itself by hand. Add the prepared honey marinade and put it in the refrigerator for two hours.


After the appetizer has infused, it can be taken out and used both with potatoes and as a side dish for meat.

Korean Instant Zucchini Appetizer

This recipe will surely appeal to all those who love spicy foods and are crazy about carrots in Korean. Here we will cook Korean-style zucchini.

To prepare this snack we will need:

  • Zucchini – 1 kg
  • Carrots – 300-400 g
  • Onions – 1 pc.
  • Garlic – 3-4 cloves
  • Sugar – 1 tbsp.
  • Vegetable oil – 8 tbsp.
  • Vinegar – 1-2 tbsp.
  • Hot peppers
  • Parsley, coriander

Grate zucchini and carrots on a special grater or cut into small cubes. Add sugar and leave at room temperature for 2 hours to marinate.


After this, drain the resulting juice and squeeze out the rest. Add finely chopped garlic, coriander and pepper.

In principle, you can also use ready-made spices - fortunately, quite a lot of them are sold.

Fry the onion in a frying pan. After this process is completed, remove the onions from the oil, and add the oil itself to the zucchini. You can, of course, add onions. Mix everything well, add vinegar to taste.

Sprinkle greens on top, cover with a lid and place in the refrigerator to cool.

After the snack has cooled, you can take it out and let it brew for a while (preferably about an hour).

In this recipe we will make a zucchini sandwich, but we will add another popular vegetable to it - eggplant.


To make sandwiches we will need:

  • Zucchini – 1 pc.
  • Eggplant – 1 pc.
  • Garlic - 2-3 cloves
  • Mayonnaise
  • Vegetable oil
  • Vinegar
  • Greenery

Cut the zucchini and eggplant into rings. Salt, roll in flour and fry on both sides. Next, prepare the marinade. To do this, mix vegetable oil with vinegar (2 tbsp). Add finely chopped garlic and herbs. Dip fried zucchini and eggplant in this marinade and place on a plate. Let it brew for a couple of hours.

We cut the bread, spread it with mayonnaise and put zucchini and eggplant on it, alternating them with each other. Decorate with greens. You can put a tomato.

  8. We put a batch of zucchini, which we previously rolled in flour, into hot oil. While the first batch is fried, prepare the next one: roll all the zucchini circles in flour.
  9. Place the fried zucchini on a plate lined with a paper napkin.
  10. When all the zucchini is cooked, we begin to form homemade sandwiches.
  11. Place slices of French loaf on a flat plate in one layer, place one slice of zucchini on them.

Only one point requires attention here - it is better that the bread does not crumble too much. And so - from any flour and any shape. I didn’t have much choice, I took Darnitsky bread. But, perhaps, the loaf would have been better here - it would have absorbed more batter.

Yes, now about the batter. To make the zucchini sandwiches, I decided to first fry the wheels of baby zucchini in a mixture of kefir, eggs, all-purpose seasoning and salt. By the way, you can use seasonings ad infinitum, getting more and more new shades of taste. Then fry the pieces of bread in the same batter. Place the cheese on the hot bread, wait until it melts, and then place the previously prepared zucchini slices on top. Mmm... it turned out very tasty!   • bread - 3 full pieces
  • young zucchini - 400 g (2 small pieces)

  • kefir - 150 g

Quick zucchini dish - recipe for hot sandwiches in a frying pan:

I started with a la batter. A la - because I didn’t add flour. Combined kefir, eggs, seasoning and salt.

Stir everything together with a whisk until smooth.

I washed the zucchini and cut it into fairly thick slices. If desired, you can make thin ones. And in general, adjust the proportions of bread, zucchini, cheese, varying according to your own preferences. I didn’t spare any zucchini for this recipe.
I cut off the peel, but this is optional - you can leave it for the young ones.

Each zucchini circle was dipped into the egg-kefir mixture on all sides.

Immediately put it in a well-heated frying pan with vegetable oil.

Fry on both sides until appetizingly browned and soft. Here you can go any way, the main thing is to achieve the desired result. I first fried it over high heat without a lid, then reduced it and simmered until soft under the lid, and then removed it again and turned up the heat so that the zucchini was fried and not stewed.

After the zucchini, I put bread into the frying pan, each piece of which I cut crosswise into 2 pieces to get a total of 6 sandwiches. My bread also went through the procedure of bathing in batter on all sides. You can do without this - just fry it or even dry it in a dry frying pan.
While frying, I added batter and turned the pieces over several times so that they were saturated and then browned.

Next, I laid the cheese on the bread, covering the entire surface of the pieces. Reduced the heat and covered with a lid. After 3-4 minutes I looked in - the melting process was already in full swing.

I placed zucchini slices on top of the melted cheese - sometimes one at a time, sometimes two at a time, depending on their size. After a couple of minutes I turned off the heat.

I served it hot, sprinkled with dried herbs (unfortunately, there were no fresh ones) and supplemented with green peas. Mmm... dinner turned out great - everyone was happy!

Today we are preparing a delicious dish - zucchini sandwiches with cheese! I cook them very often, especially in the summer, when the zucchini is very young, juicy, and tender. This dish is a must-have for all my holiday feasts. I serve these sandwiches as a hot snack.

Let's prepare all the ingredients for the sandwiches. Try to choose even zucchini of the same length and thickness. It is better to take the cheese already cut into thin slices.

Cut the zucchini into thin strips of equal thickness, as shown in the photo.

Cut the cheese strips to the size of the zucchini strips.

Since our sandwich will consist of two strips of zucchini and one strip of cheese, there should be half as much cheese as zucchini.

Place the zucchini strips in a bowl and sprinkle with coarse salt. Leave the zucchini in salt for 30 minutes.

In a bowl, beat 2 chicken eggs with a whisk.

Add a little salt and ground black pepper. Mix everything again.

Squeeze the liquid out of the zucchini and blot each strip of zucchini with paper napkins.

5. Place the finished zucchini on a serving plate in one row. Choose dishes that can be placed in a microwave oven. If you bake sandwiches in the oven, place the zucchini on a baking sheet.


6. Season each zucchini with garlic passed through a press and squeeze out a drop of mayonnaise. Although you can adjust the amount of mayonnaise depending on your taste preferences. Sprinkle dill on top of the zucchini.


7. Place tomato rings on top of the zucchini. Season them with a pinch of salt.


8. Pass garlic through a press.
