Cooking sequence

  1. Boil jacket potatoes and eggs in advance (potatoes are cooked for 15-20 minutes after boiling, eggs for 10 minutes). Cool and peel these products.

What kvass is best to buy for okroshka? It shouldn't be cloyingly sweet. In stores and supermarkets they sell kvass, which is positioned as “homemade” or “country-made”. But in order not to run into an effervescent fake, prepare it yourself according to our recipe.

The ideal version of kvass for okroshka: sweet and sour. This kvass reveals the flavors of the cold soup components in a favorable light. Rye bread gives kvass a pleasant sourness (and the blacker the bread, the more sour the kvass). The amount of sugar can be adjusted to your taste.

I indicated in the recipe the optimal amount for okroshka. Raisins are needed to enhance the fermentation effect and carbonate the drink. You will need a 3 liter jar. This is the most convenient container for making kvass.

In the traditional cuisines of different peoples inhabiting our planet, there are dishes identical to Russian okroshka. The Spaniards have gazpacho, the Belarusians have kholodnik, the Uzbeks have chalop, etc. Moreover, they are similar not only in the composition of ingredients, but also in taste.

1. Cut the completely cooled potatoes into cubes approximately 1.5 x 1.5 cm and place in a bowl.


2.We prepare fresh cucumbers in the same way.


3. Finely chop the radishes with a knife and add to the dishes with the potatoes and cucumbers.


4. Cut the meat or sausage cooked the day before into cubes and also put it in a bowl.


5. Remove the yolk from the eggs, chop the white and add to the base.


6. Mix everything thoroughly, cover with a lid and put in the refrigerator. The base can be prepared in advance.

2. Kvass okroshka with chicken, recipe with photo

For a five-liter pan we will need:

  • 0.5 kg of potatoes;
  • large carrots;
  • 500 g boiled chicken;
  • 150-200 g of green onions and a head of onion;
  • hard-boiled eggs - 4 pcs.;
  • 40 g each of parsley and dill;
  • 4 medium fresh cucumbers and a couple of salted ones;
  • 1-2 tsp. spicy mustard.
  • 3 liters of homemade kvass with horseradish.


All products must be cut into cubes.


1. Start with green onions. We chop it together with the heads; if they are large, then you don’t need to use the onions. Place the chopped onion in a plate, sprinkle with salt and grind; this is easy to do with a potato masher. It should give juice.



3. Now take half a liter of kvass, pepper and dilute a teaspoon of mustard in it. Pour this mixture over our onions and meat, mix well.


4. While the meat is infusing, cut fresh and pickled cucumbers into cubes. We transfer them to our five-liter pan.


5. Chop the pre-cooked carrots into small cubes. It can be successfully replaced by turnip or rutabaga.


6. Cut the boiled potatoes into medium cubes.
