Recipes

Blueberry cake on kefir

A wonderfully rich muffin with blueberries (and other berries of your choice). The basis for the test here will be kefir.

This option is original in that, in addition to wheat flour, we will also take a little semolina. It will add looseness, gentle airiness. Therefore, the second name of the dish is mannik with blueberries.

You can bake this both in the oven and in the slow cooker (1 hour in the baking mode).

  1. First, separate the whites from the yolks. Whisk the egg whites into a fluffy foam. Separately grind the yolks with sugar. Now we combine everything together and beat again.
  2. Pour kefir with butter, continue to beat, then add flour and semolina. Stir until the lumps disappear and a delicate consistency is obtained, reminiscent of sour cream in density.
  3. Pour pre-washed berries, mix gently so that they do not burst.
  4. We take out the form, coat it with vegetable or butter, then spread the dough, trim it and send it to bake in an oven preheated to 180 degrees for about 30-35 minutes until blush.
  5. Top with icing sugar and fresh berries.

I propose to cook a quick and tasty berry cupcake for a family tea party. Today we will use frozen blueberries as a filler.

It's so wonderful when there is a supply of berries in the refrigerator at any time of the year! I never miss the opportunity to replenish my reserves, because a frozen berry does not lose its beneficial properties at all and does not lose vitamins, and some varieties of berries, on the contrary, increase the content of vitamins - for example, blackcurrant in the process of freezing increases the content of vitamin C three times, I don't know why, but it's a proven fact.

In the proposed recipe, you can use any berries or pieces of fruit you have - all housewives know that any recipe is not a dogma, but only a guide to action!

So, take the necessary set of products for making a frozen blueberry muffin.

Crack the eggs into a deep bowl.

Add granulated sugar.

Beat the egg and sugar mixture well with a fork or immersion blender until bubbles form.

Now add the sifted flour, add the baking powder.

Add vanilla sugar and a pinch of salt, sunflower oil and mix well.

You can not defrost blueberries until the end - while you were making the dough, they thawed slightly, mix them with a spoonful of flour.

Add blueberries with flour to the dough. Stir carefully.

Pour the batter into an oiled mold.

Bake in an oven heated to 180 degrees for 30-50 minutes - the baking time, as always, depends on the form in which you will bake and on your oven. I took a cake pan, which is quite deep and narrow, so in order to bake the cake, it had to be kept in the oven longer than in the usual round wide form, for example.

Check readiness with a wooden skewer, piercing the cake in the center. Immediately after turning off the oven, do not remove the pastries so that they do not settle. Wait 10 minutes for the oven to gradually cool down and remove the cake pan.

Frozen blueberry cupcake is ready! Let it cool and cut into portions.

To serve, you can sprinkle the blueberry muffin with powdered sugar.

Happy tea!

The preparation of the dough takes several minutes, so before starting the process, you need to preheat the oven to 180 degrees.

The main difference in the preparation of dough for muffins and muffins is the base. For fluffy cupcakes, beat softened butter and sugar. In our case, sugar and eggs.

Products for the preparation of such baking do not need to be warmed at room temperature in advance, so we weigh and measure the right amount of products and proceed.

Crack two eggs into a saucepan and add sugar.

Dough for muffins, muffins, and also pastries from liquid or semi-liquid dough, which is then distributed into forms, is best done in a saucepan with a handle, so it will be much more convenient to lay it out.

In a small suitable bowl, place the melted butter in the oven. At maximum speed, beat the sugar-egg mass with a mixer until a fluffy creamy mass for 2 minutes.

Cool the melted butter a little and, continuing to beat the sugar and eggs, pour in a thin stream into the future dough. Add flour, vanilla and baking powder, mix and then beat until smooth.

Add milk in two stages, beating until smooth each time. The dough should be the consistency of thick sour cream.

Prepare baking molds. Insert paper cups inside.

Using paper cups is optional, but it makes sense. Portioned pastries are usually taken by hand, and in a glass it will be hygienic. Besides, the presence of a paper cup will insure you from sticking products to the molds, they will easily fall out of them and look beautiful on a serving platter.

Add berries to the dough and mix quickly!

Divide the dough into the prepared pans, filling them 2/3 full, taking into account that the products will rise during baking. Send the molds to the oven.

If frozen berries are used in the recipe, then You don't need to defrost them ahead of time.! On the contrary, the less time they spend at room temperature, the better. They took it out of the freezer, added it to the dough, quickly mixed it, distributed it into shapes and rather into the oven - this is a win-win strategy for success.

Bake on the middle rack for about 20 minutes. Check the rouge and bring it to the desired color level. Readiness to check with a wooden skewer or toothpick. Remove the molds from the oven, put the products on the wire rack and cool until warm.

The easiest serving option will be the same as for cupcakes. The easiest way is to sprinkle the muffins with powdered sugar. It can be mixed with coconut flakes or layered with cocoa, it will be very unusual and beautiful.

From the specified amount of dough, 12 pieces are obtained.
