  • 3 overripe bananas;
  • 1 egg;
  • Half a pack (100g) of butter;
  • 2/3 cup sugar;
  • 1.5 cups whole grain flour;
  • 2 teaspoons of baking powder or 1 teaspoon of soda (I baked with baking powder);

How to bake banana bread:

What’s great about this recipe, as well as banana cake recipe, is that you can use overripe bananas in the dough, which are a pity to throw away (tropical fruits, after all!), but you don’t want to eat it anymore. Ready bread must be slightly cooled, cut into portions. Complete banana bread with any ingredients: yogurt, nuts, raw pasta, mousse or homemade sugar-free jam.

Vegan Banana Muffin Recipe

We will need:

  • ripe banana - 6 pcs;
  • sweetener (coconut sugar, honey, muscovado, Jerusalem artichoke syrup) to taste;
  • vegetable oil (it is recommended to use coconut) - 2 tablespoons;
  • whole grain flour (can be replaced with rice or almond flour) - 1 tablespoon;
  • crushed cinnamon - ½ teaspoon;
  • chopped nutmeg - ½ teaspoon;
  • baking powder - ½ teaspoon.

Cooking

Mash bananas with a fork until smooth. Mix all the necessary components in a convenient container. Prepare a muffin tin: grease it with coconut oil or use parchment paper. Spread the dough into the molds with a spoon. Inside the cupcake, you can hide a “surprise” in the form of a piece of dark chocolate, a nut or a berry. Place the muffins in a preheated oven at 180°C and leave for 20 minutes. Check the readiness of the dish periodically with a toothpick.

Contraindications for use

The only absolute contraindication is individual intolerance to bananas (allergy).

In all other cases, you can adjust the composition depending on the needs of the body. Too often lean on a banana and products from it is prohibited for heart attacks, strokes and increased blood clotting.

Banana bread can be made simply from a few bananas and coconut flakes. For gastrointestinal diseases, allergic reactions, or specific taste preferences, simply exclude prohibited components from the composition and enter acceptable ones.

Do not forget about the calorie content of the dish and do not let the delicacy get into your daily diet. The abuse of banana bread will easily lead not only to an increase in waist circumference, but also to potassium hypervitaminosis. To avoid this, adjust the daily menu. Eat a treat in the morning after a hearty breakfast. It is optimal to cook banana bread once a week and gradually treat yourself to a sweet afternoon snack. Know the measure and be healthy!
