But until this wonderful time comes, let's remind our family about the coming spring and the coming summer. How? It’s very simple - let’s prepare a wonderful open pie with berries (frozen) - very beautiful and tasty.

His recipe is quite simple, you will need the most ordinary products and very little time to prepare the dough and send the open pie with berries to the oven. And don’t worry that something won’t work out – it won’t rise or won’t bake.

If you do everything like I do, you will certainly end up with aromatic and appetizing baked goods on your table. But so that you don’t get nervous, I will be happy to tell you and show you the entire cooking process in every detail. So, get acquainted: pie with frozen berries - a recipe with photos, very accessible and understandable.

Ingredients:

(for a round pan with a diameter of 20 cm)

  • 100 g butter;
  • 130 g sugar;
  • 2 eggs;
  • 1 tablespoon baking powder;
  • a pinch of salt;
  • 130 g flour;
  • 200-300 g of berries (I have currants and raspberries).

How to make an open berry pie:

Either take the butter out of the refrigerator in advance, or soften it in the microwave. Place butter and sugar in the bowl of a food processor or mixer.

Mix with a mixer until a homogeneous mass is obtained.

Add eggs, beat everything together.

Add baking powder and salt, about a third of the flour. Mix.

Gradually add the remaining flour, working with the mixer all the time. The dough should become like very thick sour cream.

Line a baking pan (I have one with removable sides, but you can use any other) with oiled baking parchment. Place the dough in the mold and smooth the top. That's it, we have completely figured out the dough for an open pie with berries.

Now it's time for the berries. I made the pie from frozen berries from the summer, but if you are cooking during the season, then, of course, use fresh ones. You need to take the berries out of the freezer in advance and defrost them, placing them in a colander to drain the juice. Then place the berries on the dough. Lightly press the berries into the dough with a spoon (but just lightly, they should still remain above the dough).

Bake an open pie with berries for 35-40 minutes at a temperature of 180-190 degrees. Remove the finished pie from the oven, after 10 minutes carefully remove the side and remove the baking paper. Cool to room temperature.

Sprinkle the cooled open berry pie with powdered sugar.

Many of us have had containers of berries in the freezer since the warmer months, but not everyone knows what can be created from them.

If you are one of such people, then now we will introduce you to the best five berry pies, and after carefully reading this article, you will also receive a couple of useful tips in the field of baking. Let's get started!

Two simplest recipes for shortbread pies with frozen berries

So, for the first recipe you will need:

  • 200 gr. butter/margarine (for baking/regular);
  • 150-170 gr. regular sugar (depending on the berries, the amount may vary);
  • 3 eggs;
  • 200 gr. flour;
  • 1 tsp. baking powder;
  • 1 pack vanilla sugar;
  • Any frozen berries (for example, cherries, raspberries, currants);
  • Any baking dish.

About half an hour later you need to remove the butter (margarine) from the refrigerator. Then beat it together with sugar.

After this, add eggs, sifted flour, baking powder and vanillin to the mixture in order. Knead the dough until it becomes sour cream. The next step is to defrost the filling.

We transfer the dough into the mold, and pour the berries onto it and press lightly so that they enter the dough a little (but do not overdo it, since during baking the berries will still sink a little to the bottom). Then, in an oven heated to 180 degrees (in a gas stove this is approximately level 3), place the pie dough for 35 minutes.

To find out if the cake is ready, just take a toothpick and pierce it with it. If there are pieces left on the toothpick, then you should keep it in the oven a little longer; accordingly, if it remains clean, then you can take out the delicious sweet pastries and enjoy them.

Bon appetit!

There is another version of the same shortbread pie with frozen berries. It will also be a great addition to a tea party with guests.

Ingredients for shortcrust pastry:

  • 300-350 gr. flour;
  • 150-160 gr. Sahara;
  • 150 gr. soft butter;
  • 2 yolks (or one egg);
  • A little milk/water;
  • 1/2 tsp. baking powder;
  • One sachet (10g) vanilla sugar;
  • One pinch of salt;
  • Pie tin (should be approximately 26cm in diameter).

For filling:

As in the previous recipe, beat the butter with sugar, add vanilla and beat until creamy. Add an egg (or yolks) to the resulting mixture.

Sift the flour and baking powder onto the resulting mixture and knead the future dough until a solid lump is formed. Next, to make the dough more flexible, you can add a little milk.

After this, you need to put the dough on the table and, kneading, give it a round shape. This dough does not require immediate baking, so you can set it aside for a couple of hours.

However, if you want to continue cooking immediately after kneading the dough, then transfer the entire mass into a mold and put it in a cool place for 40 minutes.

In the meantime, let's start making the filling. We take out our berries and completely defrost them.

After this, the remaining juice must be poured into some kind of cup or glass, we will still need it (if there is not a lot of juice, then you can add something similar or dilute it with water). With its help we will make jelly for the pie.

After 40 minutes, remove the “rested” dough from the refrigerator. Pour berries onto it and sweeten it a little.

Place the prepared pie in a hot oven and wait 40-30 minutes. Then remove from the oven and set to cool.

And while the baked goods are cooling, we begin to prepare the jelly, the main component of which will be one package of store-bought jelly. In principle, you can make it without store-bought jelly. Only then will your pie turn out less attractive, and when cutting into slices the berries will fall off, which is not very nice or beautiful.

Prepare the jelly according to the instructions on the package, mixing it with juice, and carefully pour it onto the pie. Everything needs to be done extremely quickly, since gelatin hardens quickly. Well, that's it, the shortbread pie is ready to serve!

Sweet pastries in a slow cooker

It only takes 1 hour and 20 minutes to prepare your next treat. This pie with frozen berries has one inimitable advantage - it will never burn!

Ingredients:

  • 1 glass of flour (approximately 180-200 grams);
  • 1 cup of sugar;
  • 1 packet of vanillin;
  • 200 gr. any frozen berries;
  • 4 chicken eggs;
  • 30 gr. oils for lubricating the multicooker;
  • One pinch of semolina.

So let's get started. First, remove the berries from the refrigerator and defrost them. Break the eggs into a large plate and beat them.

Add sugar and vanilla to them and beat again. Then pour the sifted flour there and knead our dough.

That's it, we're done with the dough, now we need to prepare the multicooker. To do this, thoroughly grease its walls with oil, and then sprinkle with semolina to make the cake easier to pull out.

The next step is to pour the dough into the multicooker, trying not to stain the walls, and add the berries behind it. By the way, their quantity may vary, depending on the acidity of the berries. For example, if you take cherries, then you shouldn’t add too much, and if you want a little more, then just add more sugar.

It's time to finally use the slow cooker. We put it in the “Baking” mode and forget about it for one hour.

After an hour, we take the oven mitts and turn the bowl over onto some beautiful dish. It should be noted that we did not use any baking soda or baking powder, but the cake still rose.

The dessert is ready to eat!

Excellent puff pastry pie with frozen berries

For it you will need:

  • 500 gr. puff pastry;
  • 500 gr. any frozen berries;
  • 1/2 cup white sugar;
  • 3 tbsp. l. potato starch;
  • One chicken egg;
  • 30 gr. oils

This recipe is different from the previous ones, it is much simpler, since you do not have to prepare the dough. You can easily buy it at the supermarket. Well, let's get started.

The dough must be kept in a warm place in advance and given time to thaw. After this, you need to roll it out to the diameter of your mold or baking sheet.

The dish you choose must be greased with oil so that the dough does not stick to it. Only after this procedure can you transfer the dough into the mold.

Be sure to sort and wash the berries. Then mix them with sugar and let stand for about 15 minutes. Drain off the excess liquid and add a little starch so that the berries stick together.

With the second layer we do the same as with the first, but we make a couple of cuts in it, in the future this will make the pie more attractive.

Now let's put everything together. Carefully place the berries on the first layer and lightly trim them, cover the top with a second layer. Be sure to brush with egg.

Place the pie in an oven preheated to 200 degrees and wait for it to bake. Enjoy your dessert!

Recipe for those who don’t have time to stand at the stove

You will need:

  • 1 tsp. baking powder;
  • 250 gr. flour;
  • 100 gr. white sugar;

In the warm summer, the easiest way to please your family is with a delicious dessert. Every housewife has a signature recipe for pie with berries in the oven: it is prepared on the basis of shortbread, puff pastry or yeast dough. Suitable fillings include blueberries, raspberries, strawberries, blackberries, black currants, and cherries. It is better to first grind lingonberries and cranberries with sugar, scald blackcurrants and gooseberries with boiling water. In winter, you can use sweet and sour jam for the filling.

How to make berry pie

During the cooking process, berry juice may leak out and soak the crust, which will ruin the taste and appearance of the dish. To avoid an unfortunate mistake, you need to sprinkle the berry filling with 1-2 tablespoons of starch. Many housewives grease the surface of the dough with egg white, form a “pillow” based on flour, sugar and butter, and caramelize it. If you don’t have fresh cherries or strawberries, you can use frozen compote preparations purchased at the supermarket.

Berry pastries diversify your daily diet. If desired, you can serve the berry pie with Swiss meringue or custard cream, with whipped cream or a scoop of ice cream; at worst, mint leaves and grated chocolate are suitable.
