You can buy a ready-made product, but it is very difficult to find, and the price is quite high, so it is better to prepare tahini yourself. If you follow all the recommendations step by step, you will get a delicate, homogeneous, rich-tasting base for your favorite dishes.

You will need:

  • Sesame seed – 100 g;
  • Refined vegetable oil – 15 ml.

The recipe for tahini paste is as follows:

  1. Scatter the sesame seeds into a dry frying pan and fry over high heat until a light golden hue appears. Always make sure that it does not burn and stir regularly;
  2. After about five minutes, the seeds should have a pleasant aroma. This means it's time to remove the pan from the heat. In this case, the contents will still warm up and “heat” for some time, so it is important not to overcook;
  3. Transfer the seeds to a plate and let cool, then pour them into the blender bowl;
  4. Turn on the highest speed and grind the sesame seeds for about a minute. After this, oil will begin to appear, and the grains will stick to the walls of the container;
  5. At this point, you need to pour the specified amount of oil into the bowl. Ideally, it should be sesame, but you can use olive or sunflower;
  6. Turn on the blender again for another couple of minutes until a homogeneous consistency is obtained.

At this point, the sesame paste is ready. Pour it into a jar and put it in the refrigerator. The shelf life is quite long, since there are no perishable ingredients.

Tahini Sauce Recipe

Tahini sauce is made in almost the same way. But some additional components and spices are added to it.

You will need:

  • Ready tahini – 100 g;
  • Lemon juice – a teaspoon;
  • Garlic – 2 cloves;
  • Ground cumin and red pepper - to taste (you can use any other seasonings).

The cooking process is very simple: all ingredients must be placed in a blender bowl and ground into a paste. If the consistency seems too thick, add a little olive oil and water. If desired, additionally add finely chopped fresh parsley. You can adjust the amount of garlic at your discretion.

Pumpkin salad with chickpeas

Homemade tahini is a great addition to many simple dishes. At the same time, they become more tasty and acquire a new, unique aroma. This salad is just one of the few such dishes.

For 4 servings you will need:

  • Pumpkin (preferably butternut squash variety) – kilogram;
  • Olive oil – 2 large spoons;
  • Garlic clove;
  • Tahini dressing - 3 tablespoons;
  • Canned chickpeas – 420 g;
  • Lemon juice and chopped parsley - 1/4 cup each;
  • Ground black allspice - half a teaspoon;
  • Red onion - a quarter of a head;
  • Salt - to taste;
  • Water – 2 tablespoons.

Step-by-step preparation scheme:

  1. Set the oven to warm up to 220 degrees;
  2. Cut the pumpkin into small pieces, chop the garlic. Combine these ingredients in a large bowl along with olive oil, pepper and salt;
  3. Mix thoroughly and place the mixture on a baking sheet. Bake the dish in the oven for about 25 minutes until the pumpkin becomes soft. Then remove and cool;
  4. We make tahini dressing according to the above recipe with garlic and lemon juice;
  5. Add chickpeas, finely chopped onion and parsley to the baked ingredients. Season the salad with the required amount of sauce and serve. The dish should be eaten warm immediately.

Salmon baked with tahini sauce

This recipe will help you cook salmon in an oriental style with its own unique twist.

Ingredients for one large steak:

  • Olive oil and Baharat spices – a teaspoon;
  • Salmon fillet – 250 g;
  • Salt to taste.

For the sauce:

  • Sesame paste and lemon juice - 2 tablespoons each;
  • Clove of garlic;
  • Water – 100 ml;
  • Onion - half a small head;
  • Ground coriander - half a teaspoon.

For decoration:

  • Pomegranate seeds, cashew nuts and parsley - 2 large spoons each.

Cooking step by step:

  1. Let's start with the Baharat spice. You can buy it ready-made, or mix it yourself. To do this, you need to take two parts each of cumin, paprika and black peppercorns. One part each of cloves, nutmeg, coriander and cinnamon bark. You also need to add 2 teaspoons of cardamom boxes. All bulk ingredients must be mixed, and the nutmeg must be grated and added to them;
  2. It is better to bake fish in small clay molds, pre-coated with vegetable oil. But if they are not available, you can use any other pottery (for example, a duck pot). It also needs to be lubricated with oil;
  3. Roll the fish on all sides in spices and add salt. Place in a mold, sprinkle a spoonful of olive oil on top;
  4. Bake in an oven preheated to 200 degrees for 10 minutes;
  5. For the sauce, fry the onion and garlic in a frying pan until golden brown, add coriander. Mix everything well and remove from heat;
  6. In a separate saucepan, using a whisk, mix the tahini, lemon juice, water and salt until smooth. Place on the flame, let it boil, add the garlic-onion mixture and cook until thick;

Making tahini is a simple process and the resulting flavor will depend on the ingredients chosen. You will need 300 grams of sesame seeds and four tablespoons of extra virgin olive oil. If problems cannot arise with the second component, then you need to be able to select the first one.

When you come to a store or shop that sells similar products, ask the seller to give you two or three sesame seeds to try. Chew them well and distribute throughout your mouth. There should be no signs of bitterness in the taste; even a small amount of it will completely spoil the paste.

Seed preparation

It is very easy to prepare the paste, but for this you need to properly prepare the seeds. After buying sesame, many women prefer to immediately fry it, after which the sauce turns out uneven, there are small pieces, and the tahini should be completely pureed. So, first of all, the seeds need to be soaked in water at room temperature for four hours. Place the ingredient in a deep container, fill it so that there is a centimeter more water. After the time has passed, drain the water and keep the product in the refrigerator for another four hours.

Roasting

Place the sesame seeds in an even layer on a baking sheet lined with baking paper if you don't have a non-stick coating. First, heat the oven to 180 degrees, after the seeds have dried, increase the temperature to 200. The roasting time is about 20 minutes, including drying, during which you need to remove the baking sheet from the oven several times and mix the seeds. It’s easy to check if they are ready; they should become a beautiful golden color; do not overcook them, which will cause the sesame seeds to turn dark brown.

Of course, you can do it differently by frying the seeds in a frying pan. Do not cover the dishes while drying.

Preparing tahini

When the seeds are well roasted, pour them into another container until they cool completely. After this, place the ingredient in a blender bowl and grind them for several minutes at low and then at high speed. First of all, the sesame will break into small particles, from which oil will appear, which will contribute to the complete abrasion of the seeds in the puree. If the process takes too long and the particles do not wear off for a long time, add half (2 tablespoons) of the prepared olive oil. After this, the paste will form faster. At the end of the process, add the remaining oil and mix the ingredients with a blender for another four minutes. That's it, sesame tahini is ready.

Additional components

As was written earlier, tahini sauce is prepared depending on the recipe of the dish for which this ingredient will be needed. Add water, salt, yogurt or lemon juice to the paste. If you prepare the sauce immediately after preparing the pasta, you can add a tablespoon of sesame oil, just not refined, so the component will acquire an even brighter aroma. If you are preparing tahini for future use and will store it in the refrigerator, it is better not to add anything extra so that the paste can be stored for a longer time and does not lose its taste and smell.

What to cook with tahini?

You can dip pieces of grilled meat, fresh vegetables, and pita bread into this sauce. Without tahini, you won’t get a full-fledged hummus; this sauce will complement its taste. We bring to your attention this particular recipe, it really deserves attention.

  1. Freshly harvested sesame seeds are lightly fried in a dry frying pan until creamy (as desired).
  2. Cooling off.
  3. In a blender, beat the seeds until crumbly, mix with oil and puree until smooth.
  4. If desired, you can add garlic, fresh herbs, and pepper to the tahini.

Ready-made pasta is used both as an independent dish and to complement the taste. Its thickness is regulated by the volume of oil.

Cooking urbech from sesame seeds

Urbech sesame paste is a product without which it is impossible to imagine a single home in the East. This is an ancient and healthy dish. The classic technology for preparing urbech involves grinding sesame seeds in stone millstones. But you can do it at home. It's easy to prepare.

Required ingredients:

  • 200 g sesame seeds;
  • 30 g olive or butter (melted) oil.

The preparation is as follows:

  1. In this recipe, sesame seeds are used raw (no need to dry or fry them!).
  2. The seeds are mixed with oil and pureed in a food processor or blender.
  3. Urbech according to the classic recipe is ready.
  4. If desired, you can add honey, sugar, salt, lemon juice. These ingredients will give Urbech a special piquancy.

Important! Urbech prepared in the classic way can be stored in the refrigerator for up to three months.

  • When the salmon is ready, remove it, pour the sauce over it, and then place it back in the oven for ten minutes.

  • Place the first cake layer in a springform pan and brush it with cream. Do the same with the rest of the blanks.
  • Place the cake in the refrigerator and leave it there until completely hardened.

Carefully remove the finished dessert from the mold, cut and serve with hot tea or coffee.
