I recently posted recipes. There were different cooking options: with chicken, with mushrooms. But we haven't cooked with fish yet. Therefore, today I propose to bake mackerel with potatoes, with onions. And you get two in one - both a side dish and a main dish.

Ingredients:

  • mackerel - 3 pcs.
  • onion - 2 pcs.
  • potatoes - 1-1.5 kg
  • salt, pepper - to taste
  • provencal herbs - 1 tsp
  • lemon - 1 pc.
  • ground coriander - 1 tsp
  • vegetable oil - 2 tbsp.
  • greens - for serving

Cooking:

1. Clean the fish from the insides, cut off the fins, tail and head. Rinse thoroughly under running water, especially inside, and pat dry with paper towels.

2. Peel the potatoes and cut into slices, 5 mm thick.

3. Onion (you can take a salad), chop in half rings and pour into potatoes. Add salt, Provence herbs (or other spices to taste - turmeric, paprika or ready-made seasoning), a little vegetable oil there. Mix the contents of the container thoroughly.

4. Wash the lemon with a brush to remove all plaque on the skin. Slice this citrus fruit into thin rounds.

5. Salt and grease each carcass with spices - black pepper and coriander. You can take a complex seasoning for fish. Just look at the composition, if there is salt there, then use less of it in its pure form.

6. Cover the baking sheet with foil. Put the potatoes with onions on the bottom, level them. Put the prepared fish in the next layer.

7. Place lemon slices on top of each mackerel, which will saturate it with juice during baking.

8. Cover the whole dish with foil and put it in a preheated oven at 190º (turn it on 15 minutes before). After 30 minutes, remove the baking sheet and open the foil. Do this carefully so as not to scald.

9. Remove the lemon slices from the fish, they have already released their juice. Send the dish back to the oven for another 10-15 minutes so that a beautiful golden crust appears on the mackerels. In this case, the temperature can be added up to 210 degrees or the “Grill” mode can be turned on.

10. When serving, sprinkle with finely chopped fresh herbs, which will complement the taste well. Also put a slice of fresh lemon on the plate so that you can pour the juice over the fish. Baked mackerel with lemon in foil: the most delicious and easy recipe

As you know, fish and lemon are best friends. And they complement each other perfectly in this recipe. No more vegetables are needed, just these two ingredients are enough to prepare a delicious dish. So let's figure out how to make real relish from a minimal set of products.

Ingredients:

  • mackerel - 600 gr. (cleaned weight, 2 pcs.)
  • lemon - 1 pc.
  • salt - 10 gr.
  • a mixture of peppers - 10 gr.

Cooking:

1. First you need to choose a good fish. When we were, I already wrote how to choose good carcasses. Pay attention that there are no yellow spots and tears on the skin. And also look at the back - the wider it is, the tastier and meatier the mackerel is.

2. Immediately turn on the oven to heat up to 180º, because the preparatory stage will not take much time. Already in thawed fish, cut off the fins, tail, head. The latter can be left, but the gills will need to be cut with kitchen scissors. You don't need internals either. Rinse very well in running cold water so that there is no black film and blood near the ridge in the middle.

3. For one carcass you need to take half a lemon. Cut the fruit into half circles, 0.5 cm thick.

4. Salt and pepper each mackerel on both sides and inside. Lightly rub in the spices with your hands.

5. Make cuts in the carcass at a distance of 2.5 cm from each other. You do not need to completely cut into pieces, but only cut through the ridge.

6. Insert a slice of lemon into the resulting slots. Lay the fish on the foil and wrap it tightly at the top and sides. Wrap each mackerel separately.

7. Put the blanks on a baking sheet and send them to bake for 20 minutes. Do you remember that the oven is already preheated at this point? Next, take out your dish, open the foil and set to brown for another 10 minutes.

4. Put the mackerel on the onion pillow and repeat the steps. That is, sprinkle the fish with seasoning, salt and brush with sour cream. Lay the onion on top.

You can take any vegetables according to the season. You can also stuff the fish with rice and mixed vegetables.

We will need:

  • mackerel - 2 pcs. large
  • onion - 1 pc.
  • zucchini - 1/2 pc. middle
  • carrots - 1 pc.
  • bell pepper - 1 pc.
  • garlic - 3 cloves
  • tomato - 1 pc. average
  • hard cheese - 100 gr.
  • salt, pepper - to taste

Cooking:

1. Mackerel needs to be thawed and washed. It is not necessary to cut off the head, but it is worth getting rid of the gills. Take kitchen scissors, pry up the gill covers and cut off the gills themselves.

2. Put the fish on its stomach and make two cuts along the ridge on one side and the other. Incisions should be made, retreating about 3 cm from the tail and head. Immediately remove the top fin and everything else.

3. Cut the ridge with scissors and remove it along with the costal bones. Do this gently to keep the look of the mackerel.

4. Now take out all the insides and rinse the cleaned carcass well under running water. Use a paper towel to blot the inside of the fish, removing moisture and any black film that may still be there.

5. When the seafood is prepared, make the filling. To do this, all vegetables need to be cut into small cubes.

6. Heat vegetable oil in a frying pan and add garlic first. Fry it for one minute so that the oil is saturated with smell. Add the onion next and cook until translucent, stirring occasionally.

7. After a minute, put the carrots, fry for a minute. Then lay the zucchini and peppers and lastly the tomato. Simmer everything together until half cooked, literally 5 minutes. At the end, add finely chopped greens, salt, black pepper.

The vegetables should stay crisp and not be mushy. Because then they will bake.

8. Cover the baking sheet with foil or parchment and lightly grease with vegetable oil. Put the fish on the belly and stuff it through the back with vegetables. As you remember, they are only slightly fried, but not fully cooked.

9. Grate the cheese on a coarse grater and sprinkle the filling on top.

It will be delicious to use two types of cheese. For example, Mozzarella and Gouda (or Dutch).

10. The oven should already be preheated to 190º. Place a baking sheet with a snack for 25-30 minutes. Be guided by your oven, but in principle, mackerel cooks quickly, it does not need to be overcooked.

11. As you can see, it turns out a beautiful dish that you just want to try. You can make almost any filling, from what is in the refrigerator. It will be delicious to add eggplant and even pumpkin.   • mackerel - 3 pcs. medium
  • onion - 2 pcs. medium
  • lemon - 1 pc.
  • butter - 50-60 gr.
  • salt, pepper - to taste

Cooking:

1. I will not write for a long time how to clean the fish, I wrote about this in the recipes above. The main thing is to wash the carcass well without the head and entrails. Cut the onion into quarter rings, lemon into semicircles.

2. Cover the baking dish with parchment paper and grease with butter. Lay the onion on the bottom, level the layer.

3. Cut the butter into medium pieces and spread over the onion in a chaotic manner.

4. Salt and pepper the prepared fish on all sides, rub the spices a little with your hands. With a sharp knife, make incisions, cutting through the spinal bone. The pieces should be about 2-3 cm wide. You don’t need to cut the mackerel completely, the carcass should be whole.

5. Insert lemon slices into the cuts. Lay all the fish on the onion pillow.

6. Preheat the oven to 180º and bake the workpiece for 30 minutes.

7. Here is such a simple and quick dish without problems. Mackerel itself is a fatty fish, so it turns out tender and not dry in the oven. Eat well and cook with pleasure!

Mackerel baked in mustard sauce

This time you will not be able to get by with a minimal set of spices, like salt and pepper. In this recipe, you will need to prepare a sauce that will give a special taste to baked fish. From vegetables, you only need onions. It is thanks to the sauce that a rather unusual dish will turn out.

Ingredients:

  • mackerel - 3 pcs
  • onion - 2 pcs.
  • vegetable oil - 2 tbsp.
  • fresh herbs - for serving

For sauce:

  • soy sauce - 3-4 tbsp.
  • mustard - 1 tbsp. with a slide
  • sour cream - 2 tbsp
  • mayonnaise - 2 tbsp.

Cooking:

1. Clean the insides of the fish, cut off the head, tail, fins. Rinse so that in the middle each carcass is white. Onion cut into half rings.

2. Cut each mackerel into 3 portions and put in a deep bowl. Send the bow there.

3. Now you need to make a sauce of 4 ingredients: sour cream, mayonnaise, soy sauce and, of course, mustard. Just mix them in a separate container and fill the fish with the resulting mass.

4. Mix the workpiece and leave to marinate for 30-40 minutes. During this time, 2-3 times you need to mix everything again.

5. Now the dish is ready for baking in the oven. To do this, transfer it to a suitable form along with sauce and onions and pour a little vegetable oil.

Salt is not needed, because there is enough salt in the filling.
