The recipe is simple, and the step-by-step photos are somehow relaxing. I myself, when I want to cook something new, look for recipes with photos - so as not to worry if I'm doing everything right. Here you will see what consistency the dough should be, how to properly lay out strawberries on a pie. What the baked goods will look like after spending an hour in the oven. These little things are actually very important. I bake berry pies with baking sheets, because they eat them at lightning speed and the usual split form is never enough. Such a pie can be safely put on the table for a large company - everyone will get a piece. The gluttonous family persuades him in one evening. It is wide, but not tall. We cut into squares and one by one, by the second ... In an hour I had nothing left. The recipe is convenient because it can be easily divided by three (as well as multiplied). One egg is 50 grams of sugar, the same amount of butter, 80 grams of flour. So you can safely bake both a mini-pie and a giant for a whole baking sheet.

Ingredients:

How to make strawberry pie

Pie dough is easy to prepare. Anyone can handle it. We take the butter, put it in a bowl and leave it on the table until it becomes so soft that it can be easily stirred.


Add sugar and vanillin.


How to stir the dough - decide for yourself. I always do this with a mixer, but you can do it with a regular fork. Grind the butter with sugar to white.


Add one egg at a time, whisking each time until smooth.


Here's what you end up with.


I always sift flour and baking powder - this makes the dough more fluffy. But you can do without it.


It does not take long to stir flour with the rest of the products. Just a minute is enough to get a smooth, viscous dough.


We take the form - I have such a mini-baking sheet. If your mold is non-stick, the dough can be spread out immediately. My form has seen the sights, it is pretty scratched, so I always cover it with baking paper.


I spread the dough in the center and begin to level it. The layer should be about a centimeter and a half. In the oven, the dough rises about two times.


We wash the berries thoroughly, remove the tails, dry them and then cut them in half lengthwise.


We spread on the dough without pressing. You can make a pattern, you can put it in a chaotic manner. No difference.


I bake such a pie in the oven at 165 degrees for 1 hour 5 minutes. During this time, it is completely baked, and the strawberries stop flowing and dries out a little.


Before serving, sprinkle the finished cake with powdered sugar, since the dough is not very sweet, and the berries can be different in taste. The amount of powdered sugar depends entirely on the sweetness of the berries. If they are very sweet, then it is enough to sprinkle it a little, but if they are sour, then you need to pour decent snowdrifts.

2. Grease the form with oil, sprinkle with flour. Roll out the dough on a floured work surface, with a diameter slightly larger than the diameter of the mold. Transfer the dough into a mold, press evenly to the bottom and sides. Roll with a rolling pin along the edges of the mold, cut off excess dough. Chop the bottom with a fork. Bake for 20 - 30 minutes at 180 C. Let the base cool completely.
3. Make the cream: Heat 400 ml of milk in a small saucepan with a vanilla pod, without boiling. In a bowl, beat the egg yolks and sugar until smooth. Mix the flour and starch and add to the egg mixture, stir, then add the remaining 100 ml of cold milk and beat well again. Remove the vanilla pod from the warm milk. Add the yolk mixture to a saucepan with milk, mix well with a whisk. Put the saucepan on low heat, cook, stirring constantly for 6 - 8 minutes, until the mixture thickens. Remove the pan from the heat and cool the cream completely.

2. Soak gelatin with 3 tablespoons. cold water in a metal bowl (so that you can then put it on the stove). Leave on for 5-10 minutes.
3. Whisk the cream into a stiff froth.
4. In a blender, turn strawberries (250g) with sugar until the sugar is completely dissolved.

Before starting cooking, you should defrost the berry in advance, if you have it stored in the freezer. Fresh strawberries are peeled from the stalks, washed and laid back on a sieve.

Next, you should prepare the shortbread dough. Melt the butter, in any of the ways, in the steam bath or in the microwave. Beat eggs, add granulated sugar. Then add melted butter. Before using flour, it should be thoroughly sieved and mixed with baking powder. In the prepared container with sugar, butter and eggs, we begin to add, constantly stirring, the finished flour. The shortbread dough for the base of the open jellied pie will be soft and not too tough. Then send the dough to the refrigerator for a while.

Then we move on to preparing the filling for our pie. We take a suitable dish, preferably deep, and mix eggs, sour cream and granulated sugar in it. We use a mixer or a whisk. Next, add flour, and continue to beat until the mass becomes homogeneous, without lumps.

Then roll out the cooled dough and put it in a baking dish. The form must be taken with sides to fit the fill.


Fill them with sour cream and egg sauce.

Before sending our strawberry pie to the oven, it should be preheated to 170-175 degrees. Bake for about 35-40 minutes. After the strawberry pie is ready, do not rush to get it out, let it stand in the turned off oven until it is warm.

In the strawberry season, I could not resist and tried to experiment with my favorite recipe for the Fantasy cake, which I usually bake with apples. I didn't know how the berries would behave in this recipe, but still I took a chance and added a whole kilogram of strawberries to the sweet pie! I share with you what I got 😉

The standard recipe for the Fantasy cake contains the following products:

  • Eggs - 2 pcs.,
  • sugar ¾ glass,
  • butter - 50 g,
  • wheat flour - ¾ glass,
  • I replaced 12 apples with 250 grams of fresh strawberries and 10 pcs. took for decoration,
  • use walnuts for the birthday cake,
  • powdered sugar

The composition of the base of the pie is similar to biscuit, and the name obliges you to fantasize: a pie with apples, pears, strawberries, apricots, raspberries,…. flight of your imagination.

  5. My strawberries, shake off the drops of water. After removing the stalks, we cut each berry lengthwise into two halves. Spread the strawberry pieces on the dough in circles, cut up (you don't need to press the berry into the flour layer).
  6. We send the form for 30-35 minutes to the oven preheated to 180 degrees. We check the readiness of the risen and slightly browned pastries with a skewer / toothpick. After cooling completely, remove the strawberry pie from the mold.
  7. Gradually pour warm water into the icing sugar, stirring carefully. Add the liquid until the desired consistency is formed - the glaze should turn out to be thick, but fluid. We shift the light mass into a bag and, having cut off a corner, randomly pour over the surface of the cake.
  8. After slicing in portions, serve the strawberry pie together with tea, coffee, dairy or soft drinks.
