An excellent product is semolina. From it you can cook porridge and bake a delicious cake. It can only be said with confidence that there will be much fewer lovers of semolina porridge than fans of pastries. Mannik on kefir has proven itself well, it turns out to be lush and moderately moist, and the variability of recipes helps the culinary fantasies to fully roam.

The classic recipe for manna on kefir, as well as on milk, fermented baked milk, yogurt, jam or tea, involves the exclusion of flour from its composition or its use in a minimal amount. The kefir recipe below is convenient in that all the main products for it can be measured with a 200 ml faceted glass. It is its volume that corresponds to the amount of kefir, sugar and cereals.

What is included in the test:

  • 180 g of sugar;
  • 160 g of semolina;
  • 200 ml of kefir;
  • 2 eggs;
  • 3 g salt;
  • 3 g of soda;
  • dried fruits (raisins, dried apricots, dried cherries, etc.) to taste.

Recipe step by step:

  1. Combine sugar, cereals and salt in one container and mix with a whisk. In another bowl, also mix kefir, eggs and soda with a whisk.
  2. Combine both mixtures together, add washed dried fruits and leave for the process of swelling of cereals and the neutralization of soda for at least thirty minutes. In the process of preparing a semolina pie, the stage of swelling of the cereal is mandatory; without it, the pastry will come out dry and tough. In order for the grains to be saturated with moisture as much and quickly as possible, kefir or other liquid must be warm or at least at room temperature.
  3. The prepared dough is baked in a form with oiled walls and bottom at 170-190 degrees, depending on the characteristics of the oven, for approximately 40-45 minutes.

3. After whipping well, add soda and vanillin and continue to beat a little more.

4. We send the real semolina to the egg mixture and stir it all well.

5. After the mixture has become homogeneous, add flour. And of course, stir again until smooth so that there are no lumps.

6. We prepare the form. We have a silicone mold. We grease it with vegetable oil so that it does not stick when we take it out.

7. Put our resulting mixture of eggs, semolina and flour into a mold.

8. We put the form on a baking sheet and place it in the oven. We turn on the oven at 180 ° -200 °, for 30-40 minutes. I usually set 180° for 35 minutes, but I always watch what happens. Time and temperature depend on the quality of your oven and the thickness of the manna. Mannik should be well browned.

You can check the readiness of the mannik by piercing it with a long thin wooden stick or a toothpick. If the stick comes back dry, there is no sticky dough on it, then your mannik is ready.

Well, we take out our mannik. What a beautiful one. Try.

Ingredients:

  • Eggs - 3 pcs.
  • Milk - 250 ml. (1 glass)
  • Semolina - 250 ml. (1 glass)
  • Flour - 250 ml. (1 glass)
  • Sugar - 250 ml. (1 glass)
  • Baking powder - 1 tbsp.
  • Vegetable oil - 80 ml.
  • Butter - 20 g.
  • A pinch of salt

Cooking:

1. Break the eggs into a deep cup and add sugar to them. Beat the eggs with a mixer. No mixer, beat by hand with a spoon or fork, or most conveniently with a whisk.

2. Beat the eggs well with sugar, add vegetable oil to them.

3. We continue to beat until the mass is homogeneous. Let's put it aside for now.

4. Take another deep cup. We warm the milk just above room temperature to dissolve the butter in it. Do not boil the milk and do not heat it very strongly. Pour the butter into the warmed milk and stir until it dissolves.

5. Pour the egg mixture into milk and butter and mix well. Gradually, stirring constantly, add a glass of semolina to the resulting mixture. Pour a pinch of salt, mix again and set aside for 1 hour so that the semolina swells.

6. Pour a glass of flour into a deep plate and add a tablespoon of baking powder to it. Mix the flour well and pour it into the semolina already swollen in an hour with a mixture of eggs. Sprinkle little by little, stirring constantly.

7. We have a mixture of medium density, similar to sour cream.

8. Lubricate the form with butter, be sure to bottom and sides. Sprinkle flour or breadcrumbs on the butter in the form so that our mannik does not stick. Sprinkle thoroughly on the sides too. Pour out the excess flour that did not stick to the oil from the mold, we do not need it.

9. Put the dough into a mold and put it in an oven preheated to 180 ° for 40 minutes.

10. Mannik was baked for exactly 40 minutes. We take it out of the oven and you can check it with a toothpick or, better, with a long, wooden stick, if the stick comes out without sticking dough, then the mannik is ready.

11. Remove the form from the manna, let it stand for a while to cool down and put it on a plate.

12. You can decorate the manna with multi-colored food coloring in tubes. They are sold in candy stores. Instead of dyes, you can use jam, cream, jam, etc.

Cut off a piece, how appetizing it is. And what a beautiful one.

Mannik is ready.

Ingredients:

  • Eggs - 3 pcs.
  • Semolina - 1 cup
  • Sugar - 1 cup
  • Flour - 1 cup
  • Sour cream 15% - 150 g.
  • Soda - 1 tsp

Cooking:

1. Pour semolina into a deep cup and spread sour cream to it so that the semolina swells. Mix everything thoroughly and set aside for 1 hour.

2. We got a somewhat thick mass, this is due to the fact that we used 20% sour cream, so I wrote 15% sour cream in the ingredients, it will be better.

3. Break eggs into a cup, add sugar and beat well.

4. Pour the beaten eggs into the semolina that has already swollen in an hour. Mix thoroughly. While we have such a liquid consistency, add soda and baking powder, mix so that they disperse better. We try to mix so that there are no lumps.

5. Gradually, constantly stirring, so that there are no lumps and so as not to pour too much, pour in the flour. With flour, we can adjust the consistency of the dough.

6. Do not forget to turn on the oven at this time to warm up, at 180 °.

7. The dough turned out not too thick and not too liquid. A little thicker than sour cream.

8. Put the dough into a silicone mold. If the form is not silicone, it is best to either grease it with oil or sprinkle with breadcrumbs so that the dough does not stick. I use silicone molds just in case. We put in the oven for 35-40 minutes.

We check the readiness in the standard way, either with a toothpick or a wooden skewer. If the dough does not stick when pierced in the middle, then the mannik is ready.

We take out of the oven. Let cool slightly and transfer to a plate.

Mannik can be served with any jam, pitted for small children. Cut, pour jam and serve.

Ingredients:

  • Apples - 5 pcs.
  • Flour - 200 g.
  • Sugar - 200 g.
  • Semolina - 200 g.
  • Baking powder - 10 g.
  • Butter - 100-150 g.

Cooking:

This recipe has a small but very interesting secret. We add all components in a dry form.

1. Pour sugar, semolina and flour into a deep cup. We mix everything well. After mixing, add baking powder and mix everything thoroughly again. We set aside.

2. We rub the apples on a coarse grater directly with the peel, of course, after washing them well.

3. We put parchment paper on the bottom of the mold in which we will bake the mannik, and smeared the sides of the mold walls with butter. We have all the ingredients ready.

4. We begin to lay out the ingredients in the form. We will lay out in layers, about 1.5 cm thick. Spread the first layer, or rather pour, a mixture of semolina, flour and sugar into a mold. We level.

5. Put the grated apples in the second layer and also level them.

6. On the apples again a layer of a mixture of semolina and flour. Then grated apples again. The top layer should be semolina with flour.

7. We leveled the top layer and generously rub the butter on it on a coarse grater. To make it easier to rub, we put it in the freezer in advance for a short time.

8. We send the cake to the oven, preheated to 180 °. Time is about 20 minutes, but be sure to check the readiness with a toothpick. You already know that if you pierce the top of the cake and take it dry out of the cake, then the cake is ready.

9. We held the cake for 5 minutes at 180 °, and then reduced the heat to 150 ° and held for another 15 minutes. Checked with a stick, ready.

They prepared easily. Didn't bother with the test. It turned out very appetizing. Butter on top gave a special flavor and a fried crust.
