We, city dwellers, do not have the joy of stocking up on a large harvest of berries every year. The emotions that I experienced while picking lingonberry bushes, completely strewn with ripe, juicy fruits of rich red-burgundy color - it's just incredible!

In September, at the height of the Indian summer, when the weather was warm and sunny, we responded to the invitation of our friends from Novgorod to visit them. They said that this year lingonberries are apparently invisible.

You will not believe! In the forest and on sunny glades - a solid, red carpet. Sit down and pick up half a bucket of berries in one place. You don't even have to go far into the forest. For a couple of days we loaded the trunk in the car to the eyeballs. In St. Petersburg we gave gifts to our relatives and we ourselves had enough work for two weeks to make preparations for the winter.

Now I will tell you how I coped with such a large harvest, in what form I save lingonberries for the winter and what recipes for cooking delicious dishes I have already tried to make. I just enjoy this healthy and tasty berry. The family love it too.

Cowberry recipes for winter preparations

Lingonberries with sugar in a blender

I took a kilogram of lingonberries, sorted and washed with running water through a colander. Then dried it on a paper towel. Placed in an enameled bowl with high sides. I added one kilogram and 300 grams of granulated sugar, rubbed the mixture with a blender. Let it sit for a bit for the sugar to dissolve. Then transfer to dry, steam-sterilized jars. Close with lids. By the way, sugar can be replaced with natural honey. This is very useful, but it will also cost much more. And you can not add sugar at all or at least, about 300 gr. Nothing terrible will happen, the product will not deteriorate, because. lingonberries contain benzoic acid, which has antibacterial properties. Store in refrigerator. In winter, you can drink tea with pureed lingonberries, make a fruit drink out of it, just dilute it with water and drink it.

Recipe for cranberry juice

Morse is my favorite drink. Even in childhood, my mother made us such a drink from cranberries or lingonberries. How do I make cranberry juice? I do not cook it, because at a high temperature most of the vitamins will be destroyed. I just take as many berries from my blanks (frozen, soaked in water) as I need. For example, two glasses. After defrosting with a crusher, I squeeze the juice through a colander. I put the peels in a saucepan, fill with water and cook for 5 - 10 minutes. Once again I strain through a colander. I add the cooled broth to the juice from the berries. It is best to sweeten the juice with honey, but you can also use sugar. Everything, delicious fruit drink is ready! Drink and rejoice. And just like with a cold, it is pleasant and useful, you just can’t convey it.

Recipe for pickled cranberries

For the winter, you can prepare soaked lingonberries. It will be very tasty and can be added as a side dish to meat and poultry. Can be added to salads or vinaigrette.

Let's make the syrup first. For a liter of water, take 2 tbsp. sand and 2 teaspoons of salt. And also add peas of allspice and cloves buds of 7 - 8 pieces. One stick of cinnamon will not be superfluous. Boil the syrup for 10 minutes.

By this time, we will prepare 1 kg of clean, dry berries. If you use in the winter, then it can be frozen or stored berries in jars of water.

You need to take a kilogram of lingonberries and half a kilogram of apples. Berries should be washed, then dried on a paper towel. And cut the apples into slices, removing the core. We put it all in banks. Cook the marinade: 700 ml of water, 100 ml of 9% vinegar, 250 g of sand, half a teaspoon of salt, cinnamon, pepper and cloves to taste. Pour lingonberries with boiling syrup. We sterilize jars for 10 - 15 minutes. Then the jars are wrapped and left until the next day. Judging by the reviews, they never exploded.

How to make lingonberry jam

I also made enough of this jam in the fall. For one and a half kilograms of washed and dried berries, I took a kilogram of sand and a glass of water.

I took a bowl for making jam. I put sugar and water in there. She let the syrup boil, stirring the sugar all the time until it was completely dissolved, and then boiled for another 7 minutes. After that, the berries were poured into the boiling syrup. Bring to a boil and boil them for 7 minutes. The fire subsided. Removed foam all the time. After that, the basin must be removed from the fire and immediately poured into sterile jars, Close the lids.

Usually I always cook blackcurrant jam this way, but then the jars must be insulated and left until the next day. Otherwise, mold will form on top of many jars. I decided not to risk it and did the same with lingonberry jam. Although, benzoic acid, which is contained in lingonberries, should protect the jam from mold.

How to make cranberry jam

If you want to get a gentle jam of a uniform consistency, you need to prepare it as follows. Take a kilogram of berries. If you are making jam during the berry season, use fresh berries. Now, in winter, you can use frozen ones. Defrost them, clean, rinse and dry.

It is necessary that the berries are soft, so we put the autumn berries on the fire and add half a glass of water, let it boil and immediately remove from the heat. We knead the berries with a tolokushka, pass through cheesecloth, laid in a sieve. Add a little more water to the pomace and boil. Then pass through the sieve again. Now add 500 g of sand to the berry puree, stir with a spoon and put on fire. Let it boil, remove the foam and boil for 10 minutes. Pour hot jam into sterile jars, close the lids, wrap the jars and leave until the next day. We store in a cool place. Such a delicate jam is very fond of children with pancakes, cottage cheese casserole, spread on a bun.

If we cook the jam for a long time, it will thicken with us, the volume will decrease by half. Place this mass in sterile jars, roll up and store in a cool place. You will get confiture or marshmallow. It's like marmalade, you can cut it with a knife, make lingonberry sweets, roll in powdered sugar and treat the kids.

Recipe for shortbread pie with lingonberries

There are a lot of recipes for pies with lingonberry filling on the Internet. They are made on yeast dough, sand, puff. I chose such a pie for our family - on shortcrust pastry with berries. Topped with sour cream whipped with sugar. As it was Saturday, friends came to visit. The pie was a huge success. It’s a pity that it wasn’t enough, he left! How did I do it?

I took 500 g of frozen lingonberries, washed them, put them to dry on a paper towel. In the meantime, I started making the dough. In an enameled bowl I put a pack of softened butter - 200 gr. I added granulated sugar - 200 gr, broke two eggs there and one teaspoon of baking powder or half a teaspoon of soda quenched with vinegar. Added 100 gr of sour cream. I mixed all the ingredients with a large wooden spoon and gradually began to add the sifted flour. In total, approximately 500 - 600 gr. Knead the dough so that it is soft and without lumps. I put it in the refrigerator for 30 minutes.

Then she rolled out the dough and laid it on a greased baking sheet. The edges of the dough are slightly raised to form sides. Berries laid out on the dough, leveled. The oven should be at a temperature of 180 degrees for 40 minutes.

It remains to take 20% sour cream - 300 gr, add a glass of sand, beat with a mixer and pour onto our hot pie. Let it stand for a few hours, soak. It turned out very tasty!

lingonberry liqueur

How can you do without lingonberry liqueur if you have such a large crop of lingonberries! Let's do it for the New Year! Own - it is always better than purchased.

I took 500 grams of berries, thawed, washed, dried and mashed with a tolkushka. I placed it in a three-liter jar, poured 500 ml of vodka, closed the lid, and mixed. Put in a cool place for a week.

After that, filtered through a fine sieve, removed the cake. I placed the liquid part in a saucepan, added 400 grams of sand - and on the stove. Heat and stir sugar. Bring to a boil, but do not boil. Cooking:

Sterilize the jars in the oven for 15-20 minutes. Wash sweet apples, peel, remove seeds and cut into slices. Boil water and dip apples in it for 8 minutes. Try not to overcook. Sort out the cranberries and wash. Dip the berries for 2 minutes in boiling water, remove, let drain and transfer to boiling 70% syrup of water and sugar. Lingonberry-blueberry jam

Ingredients:

  • 1 kg of cranberries;
  • 1 kg of blueberries;
  • 1.4 kg of sugar.

Cooking:

Boil cranberries and blueberries in boiling water. Drain in a colander, let the water drain and wipe. Add sugar to the resulting puree and mix well. Boil the jam until tender: the sugar should melt completely, and the berries should change color to a darker one. Sterilize the jars in the oven: half a liter for 15 minutes and a liter for 20 minutes. Spread the jam on the banks and roll up.

Soaked cranberries

Ingredients:

  • 1 kg cranberries;
  • 300 g of sugar;
  • 300 ml of water;
  • 50 g of salt;
  • cloves, cinnamon to taste.

Cooking:

Sort and rinse the berries well. Prepare the fill. To do this, boil water with salt, sugar, cloves, cinnamon and cool. Now tightly fill clean jars with berries. Pour in chilled filling to cover the top layer of lingonberries. Now press down with oppression so that the berries do not float up and mold does not develop. Put lingonberries in a cool place for 20-35 days. Store the finished lingonberries in the refrigerator or cellar. You can eat it all winter, as well as drink the filling.

Ingredients:

  • 2 cups of lingonberries;
  • 5 glasses of hot water;
  • 0.5 cups of sugar.

Cooking:

Sort the lingonberries, rinse under running water, mash and squeeze the juice through cheesecloth. Drain the juice from the jar and refrigerate. Pour the pomace with hot water and bring to a boil. Fold gauze in three layers and strain the resulting hot drink. Then cool the broth to room temperature, add the juice from the refrigerator and sugar. Stir and store in the refrigerator.

Ingredients:

Cooking:

After cooling, it turns out just excellent healthy sweetness! The consistency of the jam will be thick and can be spread on bread or put into cubes on ice cream or yogurt.

Cowberry sauce for meat

Ingredients:

  • 200 g lingonberries;
  • 3 art. l. Sahara;
  • 50 ml red semi-dry wine;
  • 1 star anise;
  • 1 cinnamon stick;
  • 1 pinch of salt.

Cooking:

Sort and wash lingonberries. Transfer the berries to a saucepan, add wine, cinnamon, star anise, salt and sugar. Bring to a boil and boil for 5 minutes. Now remove the star anise and cinnamon, and chop the sauce itself with a blender. Make it with just a few turns of the blender so that some of the berries stay intact. Then the sauce will be more interesting and tastier. Transfer the sauce to a gravy boat and serve with meat or fish.

Frozen lingonberries

The easiest way to freeze lingonberries is on pallets or baking sheets covered with plastic wrap. Sort the berries, remove spoiled, burst, rotten. Spread the lingonberries in a thin layer on pallets, send to the freezer. After the berries are completely frozen, put them in bags, release excess air, tie tightly and store. In the freezer, such berries can be stored for several months.

Lingonberries with sugar, frozen for the winter

Ingredients:

  • 800 g lingonberries;
  • 1.5 cups of sugar.

Cooking:

Before preparing lingonberries for the winter, sort them out and rinse them under running water. Then drain in a colander and let the water drain. Now put the berry in a bowl and sprinkle with sugar. Ingredients:

  • 700 g pears;
  • 1 kg cranberries;
  • 1 kg of sugar;

Ingredients:

  • 300 cranberries;
  • 1.5 kg of cabbage;
  • 300 g carrots;
  • 300 g of apples;
  • 3 art. l. salt.

Cooking:

Remove rotten and dried leaves from cabbage. Then finely chop the cabbage. Now wash the apples, cut out the middle with the seeds and grate them on a coarse grater along with the skin. Peel the carrots, wash and grate also on a coarse grater. Sort the lingonberries, rinse and pour into a colander to glass. Now salt and mix all the prepared ingredients in one container: cabbage, carrots, lingonberries and apples. Ceramic, glass or wooden utensils are suitable for pickling. Transfer all the ingredients into such a container. Cover it with a lid or plate and place a weight on top. Leave for 5 days at room temperature. Then send the finished cabbage for storage in a cool place: refrigerator or cellar.

Ingredients:

  • 2 kg cranberries;
  • 1 liter of water;
  • honey to taste.

Cooking:

Sort the berries and rinse well through a colander. It is necessary to sort out the berries carefully. If rotten ones are caught, the drink may ferment. Put the berries in a clean three-liter jar. Fill with cold water. Leave to infuse for 2-3 months. Ingredients:

  • 300 g lingonberries;
  • 50 ml lemon juice;
  • 150 g of sugar;
  • 6 eggs;
  • 100 g butter.

Cooking:

If the lingonberries are fresh, then first sort them out and rinse under running water. If frozen, then thaw first. Mash and then rub the lingonberries through a sieve. Now pour the resulting puree into a saucepan and cook over low heat, adding lemon juice and a piece of butter. In a separate bowl, beat eggs with sugar. Sprinkle the cooled meringue with powdered sugar and place powdered side down on another sheet of baking paper. Remove the paper the meringue was baked on. Spread the lingonberry sauce in an even layer. Now roll the roll with paper, it's very easy. Now cut into portions and serve.

Finnish mousse with cranberries

Ingredients:

  • 200 g lingonberries;
  • 70 g of semolina;
  • 75 g of sugar;

Now, using a blender, beat the boiled pears with lingonberries into a homogeneous puree with cinnamon. Transfer the pear-lingonberry mass to a plastic container. Freeze the mass for 4 hours, remembering to stir it periodically. Serve in bowls with a mint leaf and a few cranberries.

Healthy lingonberry dessert

Ingredients:

  • 300 g of frozen cranberries;
  • 3 bananas;
  • 200 ml of milk;
  • 3 art. l. honey.

Cooking:

For this recipe, do not defrost the lingonberries to make the dessert more airy. Mix all the ingredients in one container and beat the mass at high speeds. Arrange in bowls and immediately serve this wonderful dessert for breakfast, dinner or on a festive sweet table.

Green tea with lingonberry and orange

Ingredients:

  • 30 g lingonberries;
  • 3 g cinnamon sticks;
  • 7 g green tea (1 tsp);
  • 20 g orange (2 slices);
  • 1 pinch of dry mint;
  • 400 ml of water.

Cooking:

Wash the orange and cranberries. Cut off a couple of orange slices and mash them together with lingonberries. Now transfer this mass to the teapot and add green tea, mint and cinnamon there. Fill everything with boiling water. Close the lid, cover with a towel and let the drink brew for 10-12 minutes. Then pour into cups and serve immediately.
